Ingredients
- 2 cups cooked chicken breast, shredded
- 1 cup pineapple chunks, fresh or canned
- 2 cups cooked rice
- 1 medium onion, chopped
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Sriracha, optional for heat
- 2 tablespoons cilantro, chopped (for garnish)
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the chopped onion and garlic, sauté until the onion is translucent.
- Stir in the shredded chicken and soy sauce, cooking for another 2-3 minutes to heat through and meld flavors.
- Add pineapple chunks to the skillet. Cook for additional 3 minutes, or until the pineapple is slightly caramelized.
