Ingredients
- 2 large sweet potatoes
- 2 tbsp honey
- 2 tbsp olive oil
- 4 cups mixed greens
- 2 tbsp lemon juice
- 1/2 cup walnuts
- Salt & Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Peel and cube the sweet potatoes, then toss them with olive oil, salt, and pepper.
- Spread the sweet potatoes on the baking sheet and roast for 20-25 minutes, or until tender.
- Meanwhile, in a large bowl, combine mixed greens, walnuts, and lemon juice.
- Once the sweet potatoes are done, let them cool for a couple of minutes before adding them to the salad bowl.
- Drizzle honey over the salad and toss gently to ensure everything is well combined.
