Ingredients

  • 2 large sweet potatoes
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 4 cups mixed greens
  • 2 tbsp lemon juice
  • 1/2 cup walnuts
  • Salt & Pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Peel and cube the sweet potatoes, then toss them with olive oil, salt, and pepper.
  • Spread the sweet potatoes on the baking sheet and roast for 20-25 minutes, or until tender.
