Ingredients

  • 2 cups fresh corn (kernels from approximately 3 ears)
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped

  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped (optional)

Instructions

  • Start by cooking the corn: If using fresh ears, de-husk and boil them in water for about 5 minutes until tender. Alternatively, grill the corn for a smoky flavor. Once cooled, cut the kernels off the cob and set aside.
  • In a large mixing bowl, combine corn kernels, diced avocado, halved cherry tomatoes, and chopped red onion.
  • In a small bowl, whisk together lime juice and olive oil. Pour the dressing over the salad ingredients.
  • Gently toss the ingredients to ensure an even coating of dressing.
