Ingredients
- 2 cups fresh corn (kernels from approximately 3 ears)
- 1 large avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions
- Start by cooking the corn: If using fresh ears, de-husk and boil them in water for about 5 minutes until tender. Alternatively, grill the corn for a smoky flavor. Once cooled, cut the kernels off the cob and set aside.
- In a large mixing bowl, combine corn kernels, diced avocado, halved cherry tomatoes, and chopped red onion.
- In a small bowl, whisk together lime juice and olive oil. Pour the dressing over the salad ingredients.
- Gently toss the ingredients to ensure an even coating of dressing.
- Season the salad with salt and pepper to taste. If desired, sprinkle with fresh cilantro for an added burst of color and flavor.
